Calinda is locally grown and currently a student for graphic design.  She's now embarked on her henna career and is a fantastic artist.  She's quirky and zany and loves her kitty named Cheddar.  If she could have any super power it would be to turn into a cat and be a shameless attention whore. Meow.  When she was a child, her mom insisted that she take a bath when she really wanted to take a nap, more of those cat-like-tendencies...so she took her pillow in the tub with her, thinking she could do both at the same time!  In the future she hopes to visit the Czech Republic, Germany and Australia.  But especially Australia so she can find herself one of those rough and tumble Aussie outback men with their captivating accents and fun since of humor!  She's only ever entered one art contest and won $200 which she used to get some permanent art.  She loves Dolmas and cold Speghettio's.  Who wouldn't?  Recently, she found a recipe for Tarragon Shallot Egg Salad that will knock your sock off.  Check it out and let us know if you like it!
 
Tarragon Shallot Egg Salad:

8 large eggs
1/2 cup light mayonnaise
3 tablespoons finely chopped shallot (green onions work, too)
1 1/2 tablespoons finely chopped fresh tarragon
2 teaspoons white-wine vinegar (I usually add a full tablespoon or more, depending how I feel)
Salt and pepper to taste
Optional add-ons:
A few shakes of fennel
A touch of mustard

Hard boil the eggs, chop 'em up, and mix it all in a big bowl. Give it a taste -- the original recipe is a little mild, you may well decide to add a little-more-this, or a little-more-that depending on your mood. Also, don't cheat on the tarragon! It does not compare if you use ground tarragon, believe me, I tried! Make sure you get your tarragon fresh. You can leave it mild and serve it straight, or amp it up and make a sandwich. As amazing as wheat breads are, I think it tastes best on a good quality old fashioned white bread. :D
